We started Bullquarian Brewhouse with a conviction that most commercial bread has nothing to do with bread — it's engineered for shelf life, not flavor. Our loaves are built differently.
Every batch begins with a wild sourdough starter we've cultivated and fed for generations of bakes. We mix by hand, fold during bulk fermentation, shape each loaf individually, and let them rest through a long cold proof. The result is a crumb that sings and a crust that shatters.
Beyond sourdough, we bake ciabatta, focaccia, brioche, and seasonal rye — always in quantities small enough to sell out by afternoon. What we don't bake, we source from producers we trust: local cheeses, honey from nearby apiaries, and pantry staples that meet our standard.
Our signature — a 48-hour cold-fermented country loaf with an open crumb, tangy flavor, and a crust that resounds when tapped. Available daily, quantities limited.

We select what earns a place on our shelves: Wisconsin cheeses, local honey, small-batch preserves, imported olive oils, and pantry essentials we'd use at home.
Bullquarian Brewhouse lives on 17th Avenue in Monroe — a town that still knows its neighbors and values things made with intention. We opened our doors to fill a gap we felt keenly: a place where bread wasn't an afterthought but the main event.
Our operation is deliberately small. We bake in a single deck oven, shape every loaf by hand, and close early rather than sell day-old product. We know the name of every regular who walks in, and we remember how they like their crust.
Beyond the bakery counter, we curate a selection of provisions — cheeses from nearby creameries, honey from Monroe-area apiaries, and pantry items that meet our own kitchen standard. If we wouldn't eat it at home, we won't sell it to you.
